JUNE 3, 1872 was an auspicious day in Beechworth: Billson's Brewery was officially opened.
In the presence of 100 visitors, Mrs Billson stood back while the engine of the brewery was started before letting fly with the traditional bottle of champagne to formally christen the brewery.
The name Billson is synonymous with Beechworth for more than just their brewing prowess, though that is how it began when they made ale and porter, a range of cordials, aerated mineral waters, soft–drinks and health tonics.
Alfred A Billson took over his father's brewing business and was a councillor when a grand new two storey structure – to be the new municipal chambers – was commissioned in 1889.
That building is still in use today in Ford Street.
But back to the brewery... 150 years on in a complex of heritage buildings centred around a Victorian–era 'tower brewery' Billson's brewers and distillers combine traditional recipes with new twists on old favourites.
Every drink made at Billson's can be tasted in the restored Tasting Room, or enjoyed over lunch in the Taproom, Beer Garden or Speakeasy Bar.
The accomplished team and chefs are proud to present the best local produce on their menu and grazing boards.
You'll receive a warm welcome in the cellar door shop, where you can buy the full range and latest releases of traditional cordials (currently 24 flavours in the range), classic soda, beer, gins and premixed spirit drinks.
